You will support daily prep, maintain an organized and efficient station, and execute dishes to Nolita’s standards of taste, texture, and presentation. Candidates applying for Chef de Partie should demonstrate the ability to lead a station independently and maintain consistency during high-volume service.
KEY RESPONSIBILITIES (All Levels)
- Execute daily prep for sauces, proteins, vegetables, and station components
- Maintain clean, organized workstations and uphold food-safety protocols
- Cook and plate dishes according to Nolita’s recipes and presentation standards
- Assist with maintaining kitchen organization
- Communicate clearly and work cohesively with the kitchen team
- Support smooth service during peak periods
ADDITIONAL EXPECTATIONS — CHEF DE PARTIE
- Candidates at CDP level must also demonstrate:
- Ability to lead a station independently
- Strong technical skills and mastery of fundamentals
- Accuracy in portioning, timing, and quality control
- Ability to mentor junior cooks and guide service flow at their station
- Problem-solving and calm execution during busy services
KEY SELECTION CRITERIA
- Experience in a professional kitchen (Italian, Mediterranean, or fusion is an asset)
- Strong knife skills and disciplined prep habits
- Ability to work fast, clean, and consistently
- Reliability, punctuality, and strong teamwork
- Passion for flavour, technique, and continuous improvement
